Mushroom

Mushrooms can replace meat in lasagne to prepare a tasty vegetarian equivalent to this italian dish.

Origin

There aren’t many varieties of cultivated mushrooms. The most prestigious kinds are still picked one by one in the woods or in meadows. Mushrooms have been collected and eaten by humans for thousands of years. Many mushrooms are poisonous and every year there are several cases of deaths or intoxications.

Cookit

Mushrooms, especially porcini and chanterelle mushrooms, are delicious when sautéed with extra virgin olive oil, garlic and seasoned with salt, pepper and parsley. They are an extremely versatile ingredient and can therefore be used in many different recipes: they can be used in risottos, in sauces, in stuffings for crepes or soups. Some varieties can be dipped in breadcrumbs and then fried. Some mushrooms are pickled in oil or in vinegar.
