Origin

Saraceno Saffron is a handpicked product that takes its name from the place where it grows. The village of Segni, that can truly be proud of its millennial history, is surrounded by walls, that were built during the VI century b.c. and are also full of gates. The most famous one is the Sararaceno gate. There is a beautiful story behind this ingredient.Once upon a time, there was Croco, a beautiful young mortal that was totally in love with Smilace, a very desirable nymph. The passionate love between the two of them was an impossible one, and it was destined to end. The gods on the Olympus, full of compassion, transformed Croco in a saffron plant (a flower with purple petals as the superb passion but with a yellow hearth as the sun) and Smilace in a Smilax to make them live always one next to the other.

Everything starts from a bulb placed underground in August, after the necessary preparation of the soil, then October comes, and the wonderful flower comes out, conscious of the red gold that is hiding inside. The whole cultivation process, the picking and the processing of the saffron is still all handmade and it requires attention, dedication and a lot of passion. All the love that is given to the plant is then payed back by the unique spice that gives to cuisines all around the world a precious perfume, aroma and color. Perfect to season fish and meat dishes. Among the recipes there is “Trofie with octopus and quenelle of Saraceno Saffron and Parmiggiano Reggiano”.
