Origin

Cream is the butterfat layer that forms on top of milk. Traditionally it used to happen spontaneously, but now, to speed up the process, they have come up with centrifugation. Cream is basically a mid-product between milk and butter. It was many popular among nothern population but a stranger to the mediterranean area. In Italy butter and cream started being used with the arrival of the Barbarians. The first literary evidence of cream in italian cooking appeared during the reinassance.

Cream can be used in many different ways, both in savory dishes and sweet dishes. It can be combined with ham or salmon. A typical italian recipe is pasta with cream and salmon. Cream can be whipped or turned into pannacotta, one of Italy’s most famous dessert.

In savory dishes such as sauces, cream increases the thickness. It also mitigate any excess of salt or spices. In desserts, expecially with cakes, cream makes the dough very soft and spongy. Some people don’t apreciate the utilization of this ingredient in the kitchen, they take it as a way to mask the cook’s inability.
