Use Napoleon cherries to decorate fresh cakes!

Origin

On the list of best loved summer fruits, cherries are definitely near the top. A lesser known variety is the Napoleon cherry, which is a very light color ranging from yellow to orange to red. Because of its pulp’s color, it’s classified as a white cherry. It’s crisp and has a tart but sweet flavor. We could say it’s a romantic fruit given its heart shape. Although its origins are controversial, it’s likely that it’s a German variety– from Werder more specifically. It was then brought to other places, where it took on various names. While the trees begin to flower around mid-April, the fruit isn’t ready to pick until mid- to late June. The full name of this variety is “Napoleon Bigarreau”, which is why it is often wrongly associated with France.

The cherries are quite large, and besides being eaten fresh, they’re also particularly good for preserving in alcohol. This method of preservation means you can enjoy them even in the winter. And it’s really simple to do. Just put cherries in a jar with sugar and alcohol and let them sit… for about 30 days.
