Burrata

Origin

Burrata is a gourmet delicacy that comes from Puglia (Apulia), a southern italian region. This cheese, created in a farm in Andria in the province of Bari, dates back to the ’30s with the intent of recycling the waste products produced during the making of mozzarella. Burrata looks like a closed and knotted bag. The outer casing is made of solid mozzarella and inside there is the so called “stracciatella” which is a mixture of mozzarella and cream. The texture on the inside is smooth and creamy, and its flavor is slightly sweeter than mozzarella’s.

Cook It

Burrata is a very versatile ingredient and can be used in various recipes. Mozzarella can be replaced with burrata in the traditional caprese salad, it is great as a stuffing for savoury pies, it can be pureed and used to thicken a risotto or just enjoyed with a slightly toasted piece of bread.

Did you Know that

Traditoinally the final process of making burrata is to wrap the cheese in asphodel leaves, a typical plant that grows in a particular area (called “Murge”) in Apulia.
