Origin

Short crust pastry is a typical french dough. It is made with just butter, flour and water. Its unique trait is its crumbly consistency. It can be used to prepare both sweet and savoury dishes.

Cook It

There are two different kinds of recipes to prepare short crust pastry: one claims there should be egg yolk in the dough, whereas the other claims there should only be four ingredients: flour, butter, iced salt and a pinch of salt. This kind of dough is rather simple to make, it doesn´t require to be kneaded for too long and it only requires a short time to set in the fridge. It has a tougher texture than other puff pastries so more suitable for the preparation of quiches or pies.
