Origin

Taraxacum officinale is a perennial plant that belongs to the Asteraceae family. Its origins are uncertain, even because this plant can really grow anywhere, up to 2000 a.s.l. and it doesn’t need a specific cultivation. It’s easy to find it in the grass, and you can recognize it from its yellow flowers. Also known as dandelion, apparently the name taraxacum comes from two Greek words: taraxis, imbalance and akas, remedy. Pharmacists during the Middle Ages decided to call it Taraxacum and because of the yellow color of its flower, yellow as the bile, it was used to cure any liver related disease. It can be found anywhere in the world, and the perfect moment to pick it is February or September, before it blooms.

There are many ways to use taraxacum. Its leaves have a bitter taste, but perfect to be added to a salad or a French omelet, and the biggest ones can give a lot of taste to soups and veggie creams. And every part of taraxacum can be used. Buds can substitute caper (but first, put them in vinegar and salt), and toasted roots can be a valid alternative to coffee. An easy, fresh and light recipe?
