Capper

Origin

Capers are the buds of a small shrub with the scientific name Capperis spinosa, and are one of the high points in Italy’s rich culinary landscape. Capers are grown in crevices and between rocks, where the seeds are better able to take root, but they can also be potted and grown in peat or sandy soil. They’re picked in the summer time, usually between June and September. The common caper has officially been named as a traditional Italian agricultural product, while the internationally renowned Pantelleria variety received Protected Geographical Indication (PGI) status.

Capers can be used in the kitchen thanks to their aromatic properties and they are also perfect to season many italian dishes. Not only for pasta, there’s also pizza! Capers are very much used to season pizzas and focaccias.
