Origin

Parmesan cheese is one of the DOP products most representative of italian food. Its characteristic aging time makes it easier to preserve and export than other products. Its origins date back to the Middle Ages, when monks started working on a cheese that could hold well for a long time, thus parmesan cheese was born and commercialized in Italy and abroad. The production area has always been restricted to the coutryside around Parma, Reggio Emilia, Modena and Mantova and the real deal is that is cannot be produced elsewhere.

Cook it

Perfect to be eaten as it is, as a tasty snack, Parmesan is usually grated and used as dressing and filling for main courses of italian tradition. For its characteristics and popularity, it is constantly creatively interpreted by many chefs. Parmesan cheese ice cream is just an example of what mentioned.

Usual agings are 12, 24 or 36 months, but they can occasionally be even longer. Like for any other cheese, the longer the aging, the stronger the taste.
