Origin

Rosemary, Rosmarinus officinalis, is an aromatic plant available all year long in the Mediterranean area. After the II century a.C it began to be used in the kitchen, thanks to its digestive properties discovered by Galen, Greek physician. From that moment, it became very appreciated in all the Mediterranean basin, especially in Italy and southern France. In 812 with an edict, Charlemagne made mandatory for farmers to have a rosemary plant in their gardens.

Cook It

The Italian aroma par excellence, it can be eaten dry or fresh. The latter has a more delicate taste, whilst the dry one is better to be used if you are cooking. Its strong aroma is ideal to season meat, fish, veggies and focaccia. In US, rosemary is the key ingredient to flavor turkey during Thanksgiving. In the Mediterranean, it is a must during summer BBQs to marinate meat, that is often sprinkled with oil and rosemary!

For centuries, rosemary has been the object of numerous legends: in Rome, it was the symbol of life and death, and it was also a plant dedicated to Venus! “rosemary baths” were prepared to make the skin more sensible…perfect for infusions and teas because it stimulates the organism and helps digesting.
