Savoy Cabbage

Bad cabbage smell infests your kitchen? A drop of vinegar or lemon in the boiling water!

Origin

The term “cabbage” is used to indicate all kind of cabbages, coltivated since ancient times to produce leaves, flowers and stems. Rich in nutritive principles, it is a typical winter vegetable. It came to Italy thaks to venetians, that used to buy it in Cyprus. It is in the Venice area that, through times, the coltivation of this vegetable has improved and only centuries after this coltivation was exported in the Central and North Europe.

Cook It

Raw, in a salad, even if generally cabbage is eaten cooked in soups or as a side dish, it can be also a good base for rolls. To make a delicious red lentils and cabbage soup, cook cabbage in a casserole with hot broth. Or cut it in stripes and cook it in a pan (as in Gramigna recipe). If you quickly scald it in salted water, you can cook cabbage in the oven as part of the quiche with bitto cheese, cabbage and prague ham.

Did You Know That?

Romans used to eat cabbage before feats to better absorb alchool. They also used pestled cabbage leaves to cure ulcerations and wounds. For a long time, it was considered miraculous and able to cure serious intestinal and lungs illnesses.
